Porotos Granados, you'll need:
- 2 cups of fresh or frozen cranberry beans
- 1 cup of corn kernels
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 tablespoon of olive oil
- Salt and pepper to taste
Start by sautéing the onion and bell pepper in olive oil, add the beans and corn, and season to taste. Add water and let it simmer until the beans are tender. It's simple but so flavorful!

Mix all the ingredients in a bowl and let it sit for a bit to meld the flavors. It’s a perfect condiment for meats and empanadas!
