You might want to check out Street Food: Latin America on Netflix if you have access. It features a lot of street food from across the region, including some segments from Panama. Also, Parts Unknown with Anthony Bourdain often showcases local street food scenes.

I found a show called Street Food: Asia which also has some incredible insights into street food culture. Hope they do something similar for Latin America!
